Pancakes…homemade for first time…

Yes i know its sounds a little odd that i have never eaten pancakes before but in Greece its not so popular.We have something similar , a fried dough called tiganites but its much simpler. You just mix flour,water ,dry yeast and you fried  in oil. We put honey or sugar and you are done.

Yesterday morning i decided to try pancakes for first time. After a lot of searching i found a recipe for »never fail pancakes». I should have known it wouldn’t end well. They turned out too flat,more like crepes. Apparently there was too much flour and not enough baking powder. So today it was time for »grandma’s best pancakes ever». I was determined to try until i have the perfect pancakes. My second try was a huge success. Fluffy,light and oh so yummy pancakes!!!

Since maple syrup it’s not easily found in Greece ,we put different toppings. Honey and cinnamon,  homemade peach jam and nutella with some banana!!! Delicious!!!

Here is the recipe:

1 cup all-purpose flour

2 1/2 teaspoons baking powder

2 teaspoons sugar

1/2 teaspoon salt

3/4 cup milk

1 egg

2 tablespoons melted butter

Mix first the dry ingredients and then add everything else. Heat a lightly oiled frying pan in medium heat and scoop 2-3 tablespoons of the batter. When turned golden brown they are ready. You will have 4 big or 8 small pancakes in less than 20 minutes.
